player ready...The following light recipe for salsa starts with green tomatoes. Red bell peppers add flavor, as well as a contrasting color. Consider serving it with the usual chips or over a grilled chicken breast.
GREEN TOMATO SALSA
Preparation time: 20 minutes
Yield: About 1 1/2 cups
3 medium green tomatoes, chopped
2 jalapeno peppers, seeded, chopped
1 medium clove garlic, peeled, chopped
1/4 cup each: chopped cilantro, parsley
1/2 red bell pepper, seeded, chopped
3 tablespoons fresh lime juice
1 1/2 teaspoons sugar
1/2 teaspoon salt
1. Place tomatoes, jalapeno, garlic, cilantro and parsley in blender or food processor fitted with metal blade. Coarsely puree.
2. Add bell pepper, lime juice, sugar and salt. Blend well.
3. Add 1 tablespoon water, if using immediately, if salsa seems too thick. Refrigerate if not using right away; do not add water, because vegetables will give off water as salsa sits.
