Looking for a one-of-a-kind gift for Dad, something new he`d never expect? How about a chocolate mouse?

These delectable morsels of ganache (a melt-in-the-mouth mix of chocolate and cream) in the shape of tiny rodents come with almond ears and long, satin tails.

Nestled amid other chocolates in masculine-looking wood boxes, the mice are the creations of New York pastry chef Larry Burdick, who started making chocolates four years ago after becoming intrigued with the process during a trip to Switzerland.

Burdick Chocolates is virtually a one-man, everything-by-hand operation.

”He`s very particular about each piece,” says his wife, Paula. ”All he lets me do is answer the telephone.”

Although Burdick began selling to restaurants, about 90 percent of his business now is mail-order. Boxes range from $11 to $36. An all-mouse box (16 of the little critters) is $25. All orders are sent by United Parcel Service second-day delivery for an additional $8. Call 800-229-2419 to order.
